Today is my birthday!

Today I turned 23! Yay! But I feel old...kinda. LOL. My husband told me I could make whatever I wanted for my birthday. So since I'm a first time cook, I decided to make Barbecue Chicken w/ Maccaroni and Cheese! Hmm, it came out yummy! I will post the recipe later. Even though I couldn't go out since it's very cold I loved my birthday! My family (parents, sister, and brothers) came to visit me and brought me something to eat. When my husband came home from work he baked me a chocolate cake. So sweet of him and my BIL's came too! What a wonderful day!

My 1st Attempt @ Cooking


I finally had the guts to cook. I have to admit that I was very scared in doing this but I think I did alright. My first homecooked meal is called Lime and Chili-Rubbed Chicken Breasts:


2 teaspoons chili powder

2 teaspoons brown packed sugar

2 teaspoons grated lime peel

1/2 teaspoon salt

1/4 teaspoon garlic powder

1/8 teaspoon ground red pepper (cayenne)

4 boneless skinless chicken breasts (about 1 1/4 lbs.)

2 teaspoons olive oil or canola oil


Here are the instruction on how-to make it:


1. Heat gas or charcoal grill. In a small bowl, mix chili powder, brown sugar, lime peel, salt, garlic powder, and ground red pepper. Rub both sides of chicken with oil , then with spice mixture.


2. Place chicken on grill over medium heat. Cover grill; cook 10 to 15 mins. Turning once or twice, until juice of chicken is clear when center of thickest part is cut (170 degrees).



I have to admit that after cooking the chicken I panicked! Why? Because I thought I had burned the chicken so I quickly tasted it and it was yummy! Thank God it was just the chili and that's why it looked burned.
